Every product is given to us is thanks to the delicious spring waters of Mt. Fuji.
All of our producers at the foot of Mt. Fuji said us the same thing.
The reason why all of the vegetables, meat, fish, milk, and sake from the foot of the mountain all taste so great is decidedly thanks to this beautiful spring water.

The fields and mountains of Fujinomiya are always full of gifts from the water, occasionally forming swamps, and becoming a source of fresh flavor.

JINQ sounds and writes like “offering to the gods” in Japanese.
This land is blessed with a bounty of ingredients all year round, almost as if offerings to the gods were actually being made, and we don’t want to forget to say thank you.
We want the locals to rediscover the deliciousness on their doorstep.

Yoshinori Kawasaki

Born in 1978 in Hyogo Prefecture.
After graduating from a music school in Tokyo, Kawasaki went into the food industry.Upon completing his training in a Japanese restaurant in Hyogo Prefecture, he began to accumulate experience in French cuisine at a French restaurant in the city.
In 2007 he moved to Fujinomiya, Shizuoka Prefecture, to work as a chef at “Restaurant Bio-s.”
He became independent in December 2014, opening up the restaurant “KAWASAKI” in Shizuoka City. His cuisine, which made use of local vegetables and wild game, became very popular.
From December 2017 he has been involved with supervising the menu at “JINQ TOMOE Dining” as a food producer.
